are these made of aluminum or some other metal?

They are made of cast aluminum. I wash by hand. They produce beautiful cookies and if you hand wash there is no oxidation on the metal.

How do you get the effect in the pictures? Use dough balls and cut away excess dough around the edges?

I just use very sharp paring knife and cut excess dough while stamper is still on the dough, I don’t know this will help you or not
