Q: Can someone explain the difference between the 481 and the 481bl and the 479

Adam, the 479 is now discontinued and has been replaced by the 481. The 481 and the 481BL are the same product. BL just means the color of the unit is black, as occasionally Yamaha makes product in silver for the European market only.

Q: If the source (say, an ultra hd blu-ray dvd) features 7.2 channel sound, does this receiver "downgrade" the sound to 5.1 without loss of quality?

Yes! The receiver has programs that will map the missing speakers into the sound field. Works for everything above 5.1. Of course, nothing quite replaces a physical speaker in the right place, but I have no complaints with the sound quality of any 7.1 source.

Q: If I connect my cable box to this unit will I still be able to use the remote that came with my box or only the remote that comes with the receiver?

Think of the receiver as an HDMI switch (with additional capabilities). You select the input you want to use (i.e. cable box) and the receiver will send whatever is sent to that input to the output (i.e. TV). You can use a Logitech Harmony remote to automate switching the source and TV settings for each activity if you don't want to use multiple remotes.The receiver remote controls the functions of the receiver, not the things that are connected to it.

Q: Can the volume level be controlled from a smartphone over bluetooth or wifi? specifically using an android if it matters..

Bluetooth works great. You can control the volume on your device which will Increase or decrease volume when playing Bluetooth audio but you cannot control the recovery volume.
