To cook it perfectly, I put a couple cloves of chopped garlic into two teaspoons of cold olive or avocado oil in a pot. Then I heat it on medium and the second I see the garlic just starting to turn brown, I dump in 1-3/4 cups of vegetable broth and 1 cup RINSED quinoa, and simmer on the lowest setting for about 15 minutes. It’s important to me to mix in a vinaigrette that soaks into the quinoa, usually with olive oil, lemon or lime juice, S/P, garlic, cilantro or parsley, and spices, along with other things like red onion, cucumber, black beans, avocado, etc. Note that quinoa is tricky on the digestive system for some people if eaten in large quantities, and I can vouch for that. Just stomach rumbling and gas for me, but it won’t keep me from eating it! It’s a clean way to eat, I can have my fill, curb my appetite, and know that I’m taking care of myself.
