I have used it to strain and soak basmati rice and the handle is durable, well-sealed and easy to clean. **Q: What do the numbers mean?** A: The numbers represent the number of holes per square inch. 40 is the size of regular flour ground. 20 would be for whole wheat grind. Some use 80 or 100 for cake flour grind. If using for cooking, basically how refined you want the product. **Q: Which size mesh is better for sifting confectioners sugar? 40 or 60 mesh?** A: This is what i got for doing just that and it is a bit tight - takes a long time. I think a little less fine mesh would work better. **Q: What micron size is the particulate after sifting?** A: Well, it's 40 mesh, so one would assume particle size should be about 400 micron and lower coming out. However, you should also note that isn't an absolute. There is going to be a distribution of sizes after sifting from slightly bigger than 400 micron all the way down to as small as the material you put in can get.
