It is definately not goose foie gras. Hudson Valley doesn't have any goose products. They raise Moulard ducks for their foie gras. They explain it on their website. Even though it is not goose, it is exceptionally good tasting.

What if it arrives thawed at 60 degrees F, as mine did?

It depends on how long it has been at that temperature. Were the slices completely mush? They usually stay solid.

How long can I put it in the refrigerator and and what temperature ?

This product arrives frozen and should be returned to the freezer upon receipt. It will last in the freezer up to 24 months. It can also be refrigerated for up to 5 days. Refrigeration is only recommended if the product will be cooked within 5 days.

I have not found any veins in any I have had.
