Do I need one or two hinges for a 7x12 inch cigar-box to artist's pochade box conversion project? Thanks in advance for your help.

I would recommend two, especially along the 12" width. I use these for my own paintbox builds and they are terrific. You could get away with one hinge, but by tightening it enough to hold the easel open, you'll find that the hinges stick a bit more the tighter the adjustment is. You will be much, much happier with the end result using two.

I want to attach my 9" tablet computer to a similar sized keyboard. Will one hinge suffice? Also, can I glue the hinge to these devices?

Not sure hinge will be strong enough plus it will be very difficult to get glue to adhere to plastic hinge.

Will 1/2 of these hold position of an 11oz 8"x11" tablet in 'landscape?' I would also need some resistance to shock/bumps

yes it will.i have a tablet about the same size and i am using these hinges with my tablet for my drone moniter screen.more than enough needed.l

what is the weight of the hinge?

I do not know the weight in grams or ounces but if your concern is that it is heavy because of metal, it is not the case, it is made of very hard plastic and lighter than equivalent metal hinges. I recommend these. The only problem I have had that after a long use the screws pulled off the wood of the easel because of repeated tension, I had to replace with bolts with nuts.
