Q: Where does the lock actually lock from? I have a Mossberg 500 with 3 shell side saddle, wondering if that would work?

I don't know what the side saddle is that you're referring to, but I have a six shell holder on my stock so if it's something similar to that, then it will work. The lock box goes into the ejection port (where a shell is ejected and new shell is loaded when you pump the shotgun). The other piece slides into the end of the barrel. It works great for keeping it out of the hands of kids while still being able to access it fairly quickly.

Q: Would this work on a Benelli M2 Field semi auto?

I believe it will. It's pretty universal. The top piece gets screwed into wall at whatever length your barrel is. The bottom lock box has a piece that slides into open chamber of shotgun . Having said that I've never owned a shotgun like yours so I would contact manufacturer.

Q: will this work on a mossburg 500 patriot with pistol grip?

I can see no reason why it wouldn't. holds a 500 fine, also a tactical 590 with ext. magazine, underslung light. Locks into the open action, barrel is secured by a large & long L-hook. By the way, had pistol grip Rem. 870s years ago, @ work. Not a fan.
