It all says dairy-free. But that's not 100% true, or is iyt?

It depends on which bundle you are purchasing. If you look at the main image, you will see on the label which ones are Dairy Free. For example, the following flavors are daily free Confetti Sugar, Brownie Batter and Cookies 'N Cream.

This arrived with no seal and the shipping box and the pints themselves had oil all over them. Is this normal?

That is normal! The oil is just from the ingredients separating during shipment, but if you stir it up and refrigerate it, the consistency will go back to normal.

once opened what is shelf life?

Once you receive your cookie dough, we suggest keeping it in the refrigerator for 1 month or in the freezer for 3 months.
