Q: What size dosing ring do I need for the portafilter?

I think I use a 58 mm but I don't remember and I don't have my calipers with me right now.

Q: Do you have to use thise espresso pounches or can i put grounds in it?

You do not have to use pouches or filters. I grind my own beans for both the coffee side and espresso side.

Q: Is it possible to set a timer for espresso and/or brew just a single cup of coffee?

Timer is only for coffee side. Espresso side takes a minute to warm up and has option of single or double shot.
