If you have any interest in molecular gastronomy, this is an absolute MUST have item for making the adorable "caviar". Nothing tastes better than well plated beautiful food and this very well made little helping hand makes short work of it. I read reviews of how hard it is to clean, bla bla bla... but the truth is that is is not hard at all.

Works as it should! PLEASE READ!
I was hesitant to purchase this item because of the reviews but I strongly believe that it is a misunderstanding of how it works. The biggest complaint I saw was that it is difficult to clean. Lucky for me I have access to an autoclave which helps with the clean up. I also suggest reading the directions it comes with. your liquid does not go in the syringe (which is not supplied and it states that in the product description) You place the liquid in the tray, place the vacupette on it, and draw the plunger back just enough to fill the 96 pipettes, then you place the vacupette over your solution and slowly press the plunger. This tool is great for playing with molecular gastronomy and making caviars. Do not over fill the pipettes because it will be a little more difficult to clean but not unbearably difficult. If you have never done this before do not blame the equipment. You are probably making a mistake some where.

Great product, and works wonderfully, but it does not come wth the necessary syringe portion. A bit of a disappointment. It is useless without the additional item.

Caviar making fun and easy
When first using this incredible item, i was fascinated how fast an easy producing "caviar" could be. When you start making your own "caviar" you start with a syringe to make it drop by drop, now making 96 drops at a time can be fun. But when it comes to cleaning the device shows it's leaks. As the upper part is a closed system so the vacuum made by the syringe can fill each "needle", it can not be opened to be cleaned. the only way to clean it is by filling it again and again with water to remove remaining "caviar"-liquid.

Very Efficient for Molecular Gastronomy
This item is indispensable when it comes to molecular gastronomy! I highly recommend buying this over other more expensive alternatives for rapid spherication, but do keep in mind this is for the standard caviar style, not the reverse spherication method. The tube does fit with the Modernist Pantry syringe Perfect Caviar Maker (Molecular Gastronomy) , which is the one I recommend for its quality, and the inclusion with various mini kits as well Spherification Toolkit (Molecular Gastronomy) . Do keep in mind that you fill the item not through the syringe, but through the pipettes, but the benefit to this is you never dirty the syringe either. You can either pour your sodium alginate mixed liquid into the tray and then use the syringe to suck up the liquid, or you may be able to use this with larger sized containers of liquid. If you intend to make a large quantity of caviars though, this is definitely the product you want to use. just be sure to choose the cheaper reusable one.

Expecting better quality
It came without the syringe!The components are super-glued together which makes it difficult to clean after using and also hard to tell if it is air tight or not.I've used them in the past and the top usually fits together with a gasket.

Perfect for molecular gastronomy cooking (making caviar)
I got this for my Dad, who like to play around with molecular gastronomy. He has the chemicals to make different forms of faux caviar but couldn't make uniformly sized spheres. This works perfectly and makes the process much quicker and less labor intensive. Highly recommend.
