Truth be told, I thought it was also the lumpfish caviar and that I'd scored, and didn't even notice it was the seaweed one until it came time to use it! I had no idea what to expect and reading reviews online had such mixed reviews. There's a specific side dish I use it for, and I have to share it all with you, because it's so good and simple to make! Tater tots (I recently discovered Whole Foods organic ones, but regular ol' tater tots is just as good for this dish) topped with a dollop of creme fraiche, chopped chives or scallions and a massive spoonful (or more!) of the caviar. I made it with the seaweed caviar, and I kid you not, it turned out to be even better! Because it doesn't have the "fishy" element, it actually worked with the richness of the tater tots and creme fraiche beautifully -- everyone at the table went in full of doubt and came out a believer.I guess it depends on what you are looking for, and if you want to use this purely as one would with a traditional caviar, the taste is lacking for sure. The texture is more "crunchy" and firm, and you're just not going to get that rich salty flavor of traditional caviar.
