I just tried these lentils in a brown rice and lentil kitchadi recipe from Kate O'Donnell (Everyday Ayurveda for a Calm and Clear Mind). They are delicious and offer a different texture and flavor profile than red or green lentils or split mung dahl. Highly recommended.

One in a Mill French Green Le Puy Dry Lentils are exactly as stated, French green lentils. No, they are not the Montana grown black beluga lentils. I've purchased both and enjoy both, but purchased the beluga lentils, thinking that they were actually le puy French greens. Amazon's price for One in a Mill French Green Le Puy Dry Lentils is excellent, and the heavy plastic shipping bag arrived intact and sealed with no lentils scattered inside the shipping carton. Wash them thoroughly, cook slowly, and keep a watchful eye for when they are done to the texture you prefer. I enjoy them with either a dressing made of EVOO and balsamic vinegar or toasted sesame oil, white rice vinegar, granulated garlic, turmeric, garam masala, ginger, and a touch of dark soy sauce.

These are excellent lentils
These are excellent lentils. My wife and my teenage daughter cooked them into a very tasty and healthy soup that was simplicity itself. In case you do not know, lentils are fiber-rich - at 15.64 gr they sit on top of most beans. My wife adds half a teaspoon of cumin for extra flavor to the recipe that is very simple. It involves baby carrots that you keep and cut celery that you remove at the end of cooking (their flavor remains) and 3 tablespoons of extra virgin Greek olive oil (brand name Athena; there is nothing better). These lentils may need more time cooking that the lentils you ordinarily cook.
