Full flavour and subtle fat distribution.
Being from Guijuelo in Salamanca this 50% iberian breed pork cured shoulder, green tag, grass fed for finishing, was what we expected it to be. Subtle aroma, excellent, full flavour, not too salty (this is essential for my own taste) and subtle fat distribution (known in Spanish as 'entrevetado'). Pity it was the last one available for sale. I would have bought 2 more. A bit overpriced but it is good quality after all and it had to be shipped here. I tried posting a picture for others to see but the Amazon app failed to allow me to do so. Maybe next time.

Disappointed
This is the first jamon that I have been disappointed with. The taste was excellent, but the fat was vastly much more than I have come across. I think the pig had spent every day sitting and eating. The quantity of slices I could cut was minimal and it was a hard job to cut enough other parts to use for cooking or soup. And I have experience of carrying out surgery! As a result, poor quality for the price!

Excellent value for money. Great taste
As a Spaniard I am glad to say this is a really good piece value for money. It has the right amount of fat and its cured perfectly, great taste as expected from this pigs race “Duroc” will buy again!

Extremely high fat! Maybe I was unlucky…..
Unfortunately this is the worst leg I have ever seen, maybe it’s the way they are growing the pigs, I do not know, but to have a leg that was almost pure fat, something isn’t right.I buy at least one leg a year, normally two, though generally get from another provider, this is my first from this provider.From the Maza I only got around a 10-15% yield of consumable meat, generally on this cure and breed I get 40-50% (which is normal) Additionally, because the fat was so deep the cure was under; though some areas did have a full cure.I have given two star, because the meat that was fully cured did taste good. So maybe I just got really unlucky with this pig.

Duroc is a great breed due to the level of intramuscular fat, very tasty, well presented , great value for money

Fat too much fat
Once I had carved an enormous amount of fat off the leg, the meat underneath was very good. Having cost circa £90, definitely not a bargain.

Poor quality !
Not worth the price !!! The quality of this shoulder is poor:- very fatty, extremely salty, not convince the description is accurate. Will not buy this brand again.
