Instead, it measures the electrical conductivity of the fruit. The Science: The device sends a small electrical current through the metal prongs and measures the resistance. The theory is that lower resistance (higher conductivity) means higher nitrate ion concentration. The Catch: Nitrates are not the only things that conduct electricity. Natural salts, minerals, fruit acids, and even the density of the fruit's cells can increase electrical conductivity. Therefore, a very juicy, mineral-rich watermelon could give a high conductivity reading that the device mistakenly translates as "excessive nitrates." Inconsistency: Reviewers and scientific users have noted that conductivity-based meters can be unreliable. If you pull the probe out and insert it into the exact same hole, or push it into a denser part of the melon, the pressure changes the pulp density, and you will likely get a completely different reading. 2.
