Basically zero instruction about herbs. How do you "chop chives" and not have them fall through the racks?? How about basil? Put the whole sprig?

Chives are small enough to dry whole then cut to size with a kitchen scissor. Also, there are silicone mesh tray inserts that can be cut to fit. I bought some for my trays and love them. Mine are about 1/2 inch too big for my trays but the mesh is so flexable that the extra fabric goes up the sides a little, which means I can spread food all the way th the edges without small bits going under the mesh.

Can you flip the drying racks upside down to get taller or is it only one way

They don't flip upside down to increase height, you have to rotate them around 180 degrees and there are plastic knotches on the bottom that line up and sit higher to let the trays have more head room.

I really like my dehydrator, but the fan stopped working. I've taken great care of it. What can i do?
