My new favorite price/performance knife
This is the best stamped chefs knife I’ve ever used. Made from 4Cr13 steel (New name: 40Cr13) is a martensitic type stainless steel, which has higher hardness than 3Cr13 steel after quenching. The steel has good mechanical processing performance. After heat treatment (quenching and tempering), it has good corrosion resistance, polishing performance, high strength and wear resistance. Other low-cost knifes (under thirty dollars US) usually have too large a handle (I wear men's large gloves and the handle for those knifes is uncomfortable for all day use) and are made from lower quality steel. This is a "not quite premium" quality blade. For blades with tougher steel you pay 5-10x as much. Thier advantage is that they require sharpening far less often. There are jobs where paying 20x as much for a super-premium steel make sense (sushi chef), but for most of us, most of the time this knife provides excellent sharpness, just enough blade flex, reasonably easy to sharpen and a comfortable handle. This is a knife I wouldn't hesitate to use in a restaurant kitchen for real work (if you loose it you won't cry too much, it won't slow you down and if you sharpen it once a week you'll maintain a sharp blade for at least a year or two).

Rockingham forge knife
Got the chef knife, this is the second knife from Rockingham forge. The blade on these knives is far better than more expensive knives I own in terms of sharpness and edge holding, it is very sharp as a knife should be, blunt knives are harder to use and more hazardous really. The knives are well made and purpose fit. Proper value for money. Not sure where they are made but I don't care as long as they are this good.

Very nice affordable knives.
Not being able to get my kitchen knives of choice in the UK, I found this range. I’m very happy with the product, keep their sharpness, comfortable to hold and can’t beat the price. Excellent product.
