Do I have to do anything special to maintain it?** A: Never put your cutting board in the dishwasher. Never leave your cutting board sitting in water. Store the board upright to dry or for long term storage; don't leave it flat on a countertop. Use a board conditioner, food grade mineral oil, or whatever they choose to send with their boards, after every couple uses; after every use if you're using soap to clean it. If you notice the board starting to warp slightly, flip the board over; this likely happened because the board was left wet on a countertop and it dried out unevenly (top before bottom). Oil the board a couple times a day for like a week right after you get it since it's probably dry since it's sat in an amazon warehouse for a while. If you do that, your board will last quite a while! **Q: this board looks grey? is it or is there a color selection option ?** A: Hi Kevin!Thanks so much for reaching out with your question.The short answer is that the board is a very light brown only until it's been seasoned to its final dark brown color.The slightly longer answer is this:What you see in the first photo is how the board as you receive it. We intentionally send you your board unseasoned and in its pure raw walnut wood form, hence the very light brown color you see in the picture. We do this because we fundamentally believe that the type of oil or seasoning solution used on the board should remain a choice of our customers (though we do offer an all natural coconut oil suggestion in How To instructions that come with each board).But the board absolutely needs to be seasoned before its first use. Once it is, it takes on the rich chocolate brown color you see in the second photo on the listing page.
