No you do not NEED two Soiree's, unless you will be serving a few bottles simultaneously. And white wines can be decanted, all wine requires oxygen to catalyze and release their aromas. Trust your taste buds and Soiree your wine when aeration makes it taste better. - Enjoy!

Do I have to worry about the glass breaking when I put it into the bottle from the pressure?

I've had my Soiree aerator for about a year and never had a break occur while putting it into a bottle (although it's always in the back of my mind). To avoid putting excess pressure on the aerator, make sure you are twisting while applying light pressure. The tip of the aerator is threaded, like a bolt or screw, so it goes in much easier when you are rotating while pushing (or pulling when taking it out).

Does the wine drip down the side of the areator when you are finished pouring?
