This book was wonderful. Definitely worth the money. My husband and daughter love sushi, so I got this as a gift for him for his birthday. The book is very detailed and it gives you step-by-step instructions that are easy to follow and the end product comes out wonderfully. A fantastic book for anyone looking to make their own sushi or simply to learn more about it! The copy is very straightforward and interesting to read, contains much useful information (including histories of sushi and lessons in the Japanese names of the different types/etc), and never seems to drag on or become dull. The photos are of great quality and laid out nicely in the directions for a step-by-step guide in sushi-making. And lastly, the binding is wonderful. Instead of being your standard hardback cookbook which you need to prop open to read, this title lays down flat and contains rings for binding so that you never have to hassle with the pages. I really hope that more cookbooks will adopt this style to help readers in the kitchen.

best english sushi cookbook out there
Hands down the best sushi cookbook I've come across. Using this book as my guide, it's made making great sushi at home accessible. My copy now has soy sauce stains, rogue pieces of smashed rice and nori dust within it's pages bc it's my go to sushi guide. The book is designed to be used—tons of recipes, step by step photographs, serial binding so it lays flat on the counter, etc.. Every time I'm making sushi its out, guiding me through the steps. I purchased a few other books on sushi before I found this one, and The Complete Guide to Sushi and Sashimi is now my go to. I've had a brief interchange with one of the authors—Jeffrey Elliot—awesome guy, dedicated to helping others learn the craft of sushi, and he has a real talent for it. If you are wanting to learn how to make basic sushi rolls at home, this is the book you want. If you are wanting to go beyond rolls, and try making nigiri and sashimi, this is the book you want. If you want to get into breaking down your own fish at home, this is the book you want. Once you have it, have a blast learning everything you wanted to learn about making sushi at home!

This Book is Great
I recently purchased the spial bound copy of this book. It goes into detail on many aspects of Sushi & Sashimi and lots of photos as well. I am a beginner in the art of making/creating sushi so my opinion may defer vastly from someone who is more experienced. I love the spiral binding as it makes the book stay open to the recipe you are on without the need of paper weights or anything like that. I am glad I made the purchase.

Exactly what you need to know
What a well put together book. The explanations, the history, and the reasons for certain things to use was what makes this book so valuable. Defining the ingredients and how to use them and what brand names are best, along with the pictures showing exactly how to make rolls: step by step. A great gift for anyone who loves sushi.
