I did my homework on making home made Pastrami. Good Pastrami is impossible to find in the Deep South. I was very pleased with my first attempt. I could also control what went into my Pastrami. You use just a small amount of the pink Salt Cure, but it helps me use less regular salt. This is great for people on low sodium diets.
