It is a bit tougher than good burger meat should be, which indicates a little too much handling. We raise cows and eat our own meat, processed by a local guy, and our burger is always easy to patty out, and very tender to eat. This meat was excellent meat, just ease up on the grinding, and it will be the perfect burger meat. That said, it was worth the money, and I would probably buy again. UPDATE: Upon 2nd purchase, the burger was just as good burger meat should be. Nice and tender. Repeat buyer here.
