My favorite chocolate brand
Guittard is the best chocolate and the fact that this is organic elevates it because organic is important to me and my family. It is the best tasting chocolate. It is the best texture and consistency. It is the best to cook with and bake with and I cannot recommend it highly enough. You can find it on sale. It is always fresh. And even when itโs not on sale, it is worth the price because it will make your recipe better always.

Guittard dark chocolate for cooking, baking, garnishes, or eating out of hand
As a dark chocolate aficionado, I had to order this Guittard 74% dark chocolate. It is reasonably priced, but not cheap; it is made with quality ingredients and tastes good. You can use it for cooking, baking, garnishes, and eating out of hand; its higher cacao content makes it better for the first three, as it is not super-sweet like some dark chocolates.

I'm finding I grab a couple out of the freezer for a treat for myself! These are so easy to use, great quality melt and taste of chocolate without the sweetness. 12 oz reseal bag is conveniently sized for most recipes and lets me jazz up some of my other baked goods, etc., as surprise addition. Known quality brand, can't go wrong.

For making really good candy
If, like me, you don't have a marble slab or a bricklayer's slab tool for tempering chocolate, you can simply melt these wafers and get lusciously smooth chocolate, perfect for dipping candy centers into. Without adding a single other ingredient, it's smooth and intensely delicious. Use a double-boiler so the chocolate melts slowly, then use it right away. The only problem I had was that the chocolate layer came out a bit thicker than I wanted it to. I put the candies on parchment paper to cool and set. It might have been better to put them on a cooling rack and let the chocolate drip off to thin it. Otherwise, I'm feeling chuffed that for the first time in my life, I made what looks (pretty much) like bought candy, and it tastes absolutely terrific.

Made for great cookies
Expensive chocolate but I've been wanting to try this for a while and finally decided to do so for thanksgiving. I've never done chocolate wafers before, next time I would chop some of them, but I enjoyed this chocolate. Very fresh and in date (always a little skeptical about food stuff on amazon---I've read the horror stories.) Nothing was melted, damaged, or opened, and I would buy this again; maybe the chocolate chips instead with a 65% cacao. I got 74%. I'd melt the rest of these with some strawberries or eat them with some fruit since plainly they aren't sweet at all. It's perfect for someone that likes a chunk of bittersweet chocolate instead of small chips.

Makes a big difference in your chocolate chip-based cookies
These went into a cookie recipe that included some home-made toffee, and the reviews were spectacular. Most loved the fact that the chocolate spread out a bit during baking, and the cookies really looked and tasted professionally made. They' re a bit expensive, and I'm not sure they really needed to be 74% cacao for this recipe, but they really made a noticeable difference in the look and taste of the final product.
