A: Shape, thickness, number of packages.  The descriptions of each style shows the ingredients are the same; it's mostly shape (round and thin like very thin spaghetti; both wide and narrow flat), and some of the styles are double-packs.  Sichuan style is the type of noodle you will find in Chengdu, capital city of Sichuan Province, in its famous dan dan mian. (mian is Mandarin for noodle)

**Q: Are these an alkaline noodle?**
A: No soda ash in the ingredients - just wheat flour, salt, and water.  Soda ash (sodium carbonite) is a nice addition to home-made noodles, as it makes then chewy, good for "Flaming noodles," if you know this Chinese dish.  So, the answer to your question is no, not alkaline noodles.
