This is the worst-designed lid in human history. The first time I tried, it took me about 6 minutes to get it open, which I finally had to do with a butter knife. When it opened, probably 8-10% of the mix flew all over my kitchen counter. Getting it to close is no easy task either. After the second usage, I did not even put the lid back on; I put the mix into a nice large emptied out Mayo jar. Do yourself a favor and do the same. And not only does the packaging suck, the directions on the label are only for HUGE portions, like a gallon. So, if you want to make 3 ounces, you have to guess. On the bright side, the product is quite good, I always convert this to Bernaise and turns out great! **Q: need a cup at a time. has anyone figured out the proportions to make that? knorr should have figured out that not everyone needs 2 1/2 gallons. LOL** A: Here is how I do it for 1 generous serving. Melt 2 Tbs butter in small saucepan over medium low heat, stir in 3 Tbs sauce mix until well mixed, now while stirring continuously, stir in 1/2 cup milk and heat to boiling and boil one minute or until sauce thickens. This seems perfect to me. **Q: Why did knorr change the highly successful product formula to one that requires water instead of milk? reviews are bad.** A: you can use milk. I do wish that there were directions for making smaller batches instead of using the entire container at one time, which is unreasonable for a home use. I use the following directions for making the hollandaise sauce: Ingredients: 2 Tablespoons of hollandaise sauce powder 1 cup of milk 1/4 cup of butter Directions: Melt butter in a small saucepan over medium heat.
