Having been in catering for many years in the past, de-boning whole pigs, legs of lamb, whole hams, and other carcasses, carving every almost type of roasted joint you can think of. I decided to bite the bullet and spend some money on a new decent knife, instead of using the same ole half a dozen of different "Cheap" knives from supermarkets, that really weren't that good, having to trying to keep them sharp.. Sabatier knives were always the high-end traditional standard to use 50 years ago, and I always thought they were sharpest and best knives to use. How wrong I was,, These "modern" types of knives weren't around 50 + years ago. This SHAN ZU Japanese knife is the sharpest I have ever used. I bought this particular knife to use for almost every job, like carving roasted joints like chicken and for all meats. Any experienced chef will tell you that you don't need a particular knife for every task. It ticks all the boxes for quality and sharpness.
