Q: Can it be calibrated?

The thermometer comes pre-calibrated, but it also comes with a re-calibration feature.

Q: Isn't poultry supposed to be cooked at 165ﾟ not 185ﾟ

Yes poultry should be 165 or it will be very dry. The thermometer is wrong. But it works great, fast read.

Q: I have never used one of these before so I know this is probably a stupid ? but can this go inside the oven in the meat while it is cooking?

There are readers that are made using for oven that has a long probe that is left inside oven with the actually reader left outside. This reader that I purchased would certainly melt if left inside. It works well though.
