Do you have to use two omni outs to setup a stereo in-ear mix?

Yes. Each omni carries a mono signal. you would need to use two omni to accomplish a stereo mix. please note that this is not a limitation or condition of this console. it works the same on ALL consoles. XLR cables carry a banced mono signal.

Does this mixer have gain knobs or something of the sort?

I don't have that mixer but most digital mixers have gain for each channel. It will not have a manual gain knob but rather on the digital screen

Its a Yamaha…right?

First thought, its a Yamaha, I’ve mixed on those before. But wait, for some reason they changed the interface. Several other Yamaha consoles have similar interfaces which makes them easy to use. Not this one. You get to learn a totally new way thats not even close to the other Yamaha mixers.
