I store these in the freezer to maintain freshness. They have awesome flavor and store for like ever. These are really easy to use, Since I'm pretty much home bound, having these on hand save me from a 30 mile round trip drive into town to the big box grocery store. I usually buy fresh, then clean and chop up fresh produce to freeze for use in soups and stews. But that takes a lot of time and freezing causes ice crystals which destroy texture of veggies and delicate and robust flavors. These freeze dried have lost very little, they taste almost like fresh cut veggies. I'm soooo impressed, These are so much better then brand name spice manufacture freeze dried products.
