Not only because there are 2 in a box, but mainly because they're made of a sturdy material that doesn't scratch easy showing knife marks like the wooden or the thick white plastic ones do & additionally, they're much thinner than what I'm used to making for ease when cutting and slicing because you're doing so on a completely flat surface. I love the width of the large one because you can actually cut things & move them out of the way still having plenty of room to continue slicing. They are flexible, easy to clean and store and are a great addition to any kitchen. They stay put on the counter, are substantial enough to feel solid under a knife, but are light and flexible enough to enable carrying cut food to the pan (be careful not to touch a hot pan with the mat). Much nicer than the thin, semi-translucent ones that end up curved and badly scratched. I like that they are easy to hand wash after every use or sterilize in dishwasher or microwave. Nice sizes and shapes with practical grooves to catch juice, but the green one is an unattractive, anemic color.
