Best knives ever also easy to sharpen. The edge lasts for long time. A sharp knife is safer than a dull knife that you are using more force to get thru what you are trying to cut. For the price these work well. Years ago I was gifted a Sharps fillet knife and am always looking for another knife I would like and use as much. These blades are close. My bigest problem with them is the cheap plastic and hollow grips. I think if a person put on a wooden handle this could be a really great knife
