A: I would not compare it to brie. It has a firmer texture (although it's not a hard cheese), and a nuttier more complex flavor.

**Q: Is this manchego - like chees?**
A: It's a softer, more mild, but excellent cheese.

**Q: What kind of milk this cheese is made from**
A: ISTARA OSSAU IRATI is 100% "brebies" milk - the cheese has an AOC and POD - best in spring (lactation) and 90 days

This is the best tasting cheese and very hard to find at times . It’s made with sheep’s milk . It’s mild and the texture is between mozzarella and provolone .

I am new to sheep's milk cheese; this cheese was my gateway into trying other types. The flavor is strong but not overwhelming. Pairs well with dates, figs, nuts and grapes.

This cheese is marvelous! Buttery and nutty, not very funky and is simultaneously a bit smooth and almost crumbly in texture. A new favorite for sure. Just delicious. A hard cheese, if that wasn't obvious.
