How do you use tray only on actifry genius xl 2 in 1

I have never used the tray only. However I have cooked chips in the lower tray and lamb chops in the top at the same time. Result-scrumptios!!

how do you cook food in both trays that may require different temperatures/cooking times ?

Set the program and time for the lower pan, then press the 2 in 1 button and do the same for the upper tray. This ofcourse is providing that one of the pre-set program suits your needs, If you wish to have more control, the you can use the manual mode in which you can set different temperatures, but as the heat from the lower pan will bleed into the tray, the range for this is limited. As to what temperature or time is required, this is a matter of trial and error, but remember that cooking is extremely fast. This appliance will save power, but it has the potential to ruin a lot of food through over cooking until you have mastered it. Niether the manufacturers or Youtube are of much help.

Had both but gone back to an actifry 100% great chips or wedges hardly any oil 22mins sorted

Can you bake with this as well?

You could bake more delicate foods in the top tray as this does not require the paddle.
