How tall is this hat?

4 3/4 inches. It's also 7" in diameter inside edge to inside edge.

Since there is no size chart how do I know if this would accommodate a 7 3/8 head?

I don't know what that measures to,but the fez is fairly small and meant to fit a child, in my opinion.

How does it stay on a childs head?

Depends on the child and depends on the head. It fit my 6 year old a little low, but he was thrilled with it. Just like wearing any hat, you have to modulate your activity level to keep it in place.

Will the Fez hat be too big for a 5 year old

Yes, I think it would be too big for a small child. The hat was large on my adult head.
