They're fresh so the shells are tender not stale or brittle. The seeds are melt in your mouth kind of fresh. The seasoning isn't over done so you get the onion and garlic flavor with traces of salt but have to eat an entire handful to get that really strong salty seasoned flavor. Seasoned so lightly they're perfect because you taste seeds instead of salt. Update: I just bought a bag of the "Jumbo Lightly Salted" and these are the best non flavored pumpkin seeds I've ever eaten. They are big, very lightly salted and they're tender because they aren't overcooked.
