186 authentic well-researched recipes for all manner of German and Austrian sausages. Way beyond American Brätwurst. This isn’t a beginner book unless you’re ready for time and investment.Most of these recipes are going to call for a grinder and stuffer of some sort. You’ll need casings. Many need cure 1 or cure 2 and very many call for ingredients most folks don’t have already in the kitchen. Some require cold smoking and some require cultures (usually T-SPX). That said, if real German würst is your objective, or some of the lesser known sausages, this is a great read.It can all be found online - but it’s nice to have it in a single bound volume. The history and instructional material is worth the read.Recipes are for 1 kilo and in grams and ounces. All translated to English.

Great info and many authentic German recipes
I knew about six commonly available German sausages which I would usually get in my local supermarket. So I was surprised to discover that there are a thousand more and I am thrilled that I was able to find 186 recipes of the most popular sausages in this book. It’s based on traditional German standards for making sausages so the information comes straight from the official source the way it has been made for generations. I love cooking and have an insatiable appetite for anything new in this area. For me this translates into buying many books with sausage making recipes, especially the ones that deliver original material. And German Sausages, Authentic Recipes and Instructions truly delivers. I have found information about Teewurst and Mettwurst (spreadable fermented sausages) quite unique. The recipes are very detailed and the book is a great reference for anybody interested in sausage making.

Have some fun trying new recipes!
I like making my own sausage. The Lem sausage seasonings are very good and I’ve used them quite a bit but this recipe book kicks things up a notch. It’s fun experimenting and damn tasty!

This was bought as a recipe book for German sausage.I ended up learning so much about the process that I have full confidence in making the fantastic recipes.Highly recommended
