I bought 4 brands of agar from Amazon and compared them side-by-side. To 1 cup of 50% apple juice (1/2 cup of juice + ½ cup of water) I added 1 teaspoon of agar. Then I heated it almost to boiling, stirred and let cool down to room temperature. “Hardness” is how hard the product is. The harder the better, meaning you have to use less amount of agar to achieve same results. “Taste” means taste. Ideally agar should have no taste at all, so it won’t change the flavor of your dish. Hardness and taste are rated on scale from 1 to 5, with 1 is the worst and 5 is the best. This powder had a slight chemical smell when I first opened it, which is something I've heard of before with cheap agar-agar powders. I figured it might be alright once I made something with it but this was not the case. It made my water mochi taste like liquid sharpie. Trying to retun now. :(
  

### ⭐⭐⭐⭐⭐ Good quality

Used this to make jelly fruit cakes and it works beautifully. It sets as it supposed to in timely manner at room temperature. I use about 1 tsp per each of liquid. To cut down sugar intake, I use monkfruit sweetener. It's like eating dessert with no guilt. Love it!
