What is the recommended way to roast this coffee? Are these beans good for espresso? Thanks

Farm blend is perfect for medium and darker roasts. This coffee is sun dried natural with plenty of sweetness and cocoa in the cup. On espresso it has a very syrupy body which is exactly what you want. No wonder the best Italian espresso brands use Brazilian sun dried natural coffees as a base for their espresso blends.  When you roast this coffee for espresso you can chose two roast profiles. You can go the modern light roast way. For espresso take it out 30-40 sec after the first crack stopped. make sure your rate of rise during the roast development (after the first crack) is nice and slow. For traditional European espresso you can take out this coffee just before or on the onset of the second crack. I hope this helps. happy roasting!

Our these beans organic and non gmo?

They are non-gmo, but do not have organic certification. Being small farmers, the certificate is just not cost effective. There is no massive spraying and we only use products authorized by the government. We live at the farm, consuming all products from it. It is on our best interest to not poison ourselves. :-)
