What grade of stainless steel (200, 300, 0r 400 series) is this product made of?

Product description says 18/10, which is on the better end of 304 grade stainless steel — better corrosion resistance and slightly better tensile strength than 18/8, which is also 304SS. The “18” is the % of chromium in the alloy, and the “8” or “10” is the % of nickel. The 2% higher nickel content might not seem like much, but it makes the alloy a lot less susceptible to corrosion from mild acids and salts, especially under heat — all of which are the conditions present in most cooking situations.

Is it safe to use it for baking, roasting, broiling etc?

Pretty safe with stainless steel for these. Wash after use. I am replacing aluminum foil with these.

Is the inside bottom of the plate slightly raised? I am looking to replace tin pie pans that I use for dredging food.

It may be ever so slightly raised but not much. They are very versatile.

Its not microwave safe. Its metal. Probably they meant dishwasher safe.
