It's a knife for cutting garnishes. There's nothing it can't do. This bad boy has held an edge like a champ and hasn't let me down yet. My only complaint, and it's more of a preference, is the unfinished wood handle. As you know, handling ice means water and water is rough on untreated wood. After a while the texture of the handle just became unpleasant. However, the handle never lessened in sturdiness or quality. I lathered it up in some linseed oil and it pretty much resolved the issue.
