Great fresh ginger taste, without the fuss of replacing fresh ginger that's gone bad
I tried this freeze-dried ginger and found it to be wonderful for marinades, salad dressings, and even in my morning coffee! When I ran out, I bought this packet of SIX bottles. That's how much I like it.The freeze-drying maintains all the flavor of fresh ginger, but unlike fresh ginger it never goes bad. Works for me!

Great substitute when fresh ginger is impractical
With trying to limit my trips to the grocery store recently, I'd been looking for a substitute for fresh ginger. Powdered ginger is OK for desserts but not savory foods, and I'm not a fan of jarred ginger paste at all. I was hoping freeze dried ginger would be the solution.Pros: This freeze dried ginger definitely retains more flavor than powdered and can be easily crushed into a powdery texture if desired. I've used it in stir fries and braises, and it's also great crumbled as a finisher over fried rice to add a little more ginger "oomph" to it. I've had my current bottle open for 3.5 months and since it's a glass bottle and the top seals very well, I haven't had any noticeable loss of flavor or texture.Cons: It's definitely more expensive than other forms of ginger, even if you buy it locally instead of on Amazon, and I would say it's not quite as flavorful as fresh.Overall, I really like it and plan to keep buying it as needed. Is it a perfect replacement for fresh? No. Is it a good replacement for fresh, and one that's very convenient to have on hand when you don't have any fresh ginger or just need a little pinch of it for a recipe? Yes and yes.

Amazing tea!
I absolutely love this ginger! It brings a nice spice to this "tea" I make. I bring about 1 gallon of water to a boil and add in one container of this ginger along with one pack of ( ZOT 100% Organic Licorice Extract with Anise, 0.4 ounce Flip Top Box, Set of 6 items https://a.co/d/3tYI0vR ) and let it steep for 5 minutes before straining into my "cold brew" coffee container (because it has a filter that stays in the liquid) I usually fill 3 or 4 containers that I pour through this filter when the "pot" is empty. So much flavor! This and water is pretty much all I drink now lol highly recommended (even if you're not making this strange tea 😆).

Love the convenience
I have used this exact item but couldn't find it in any store. So glad I found it here. I like that it is freeze dried. Often I would buy the fresh ginger, but wouldn't use it all right away and it would be wasted. This works perfectly for what I want it for!

expensive but very handy and pretty good flavor
I got this on a lark to see what it would be like. I have to say that it exceeded my expectations. My expectations were not particularly high, but I've now used half a bottle in a few weeks, so I guess that's proof that I like it.I like ginger. A lot. Will it replace fresh ginger? No. This is a convenience product. I don't always have a hand of ginger in the fridge, I don't always have prepped ginger in the freezer. Sometimes the supermarket is out of it. This will get you pretty good ginger flavor in a sauce. It's freeze dried, so some of the mojo has been lost, but also a lot has been retained.I just have to resist a lazy urge to reach for this when I otherwise have access to fresh and use it for what it is: a crutch when in a pinch.

Good sub for fresh produce
Love this, so convenient to use instead of chopping and keeping fresh ginger in pantry. Favor is almost just as good as fresh ones.

Bought these to use in my Masala Chai recipe
My husband and I drink so much Masala chai that I started buying the ingredients and grinding my own tea and spices. I found a really good recipe that matches the flavor of the Tazo Chai Latte concentrate I used to buy. You can find it at a web site called "the things we'll make" (leave out the apostrophe in we'll) how to make chai tea from scratch in bulk. The difference between grinding my own ginger and other spices, over getting them already ground in spice jars is huge, and totally worth the effort. I grind up the recipe and keep them in a mason jar. I use it up so fast, it doesn't have time to get stale.
