Why is the labeling different on different size jars? Is this product soy free or not?

Indeed it is soy free. Labeling is different because of the different flavoring. Brown is for chocolate .

The raw chocolate/cacao flavor says, "Contains 7 mg. of naturally occurring caffeine per (36 gram) serving." In other words, one serving has 7/36000 or .02% naturally occurring caffeine, most likely from the cacao.

which of the flavors is less sweet?

Chocolate is less sweet than the sugary version. I have both, I enjoy both. The chocolate flavor tastes very much like normal chocolate milk. The sugary type is mildly sweet with notes of vanilla. By comparison, it is much less sweet than fruits or candy.
