Beautiful knife, well balanced, not too heavy. Very sharp straight out of the box.

This is a seriously sharp knife. It handles beautifully, so easy to get great results. Does all the work for the user superb for thinly slicing hard vegetables like potatoes. Makes light work of winter vegetables, I'm looking forward to the next Dauphinouse, it's going to have lots of fine layers. I'm generally a fan of Paudin knives, the offer exceptional quality for a good price.

an excellent knife with a good sharp edge. Comfortable handle and well balanced in the hand. It feels solid with no hint of flex in the blade without feeling too heavy either. I find the (included) blade protector sleeve invaluable as it keeps the sharp blade edge protected from other equipment in an otherwise crowded cutlery draw and also prevents you from accidentally cutting yourself on it when rummaging in the draw. So far, I've not noticed any deterioration of sharpness on the blade edge. (1 Month of constant use so far)

This has become my main knife in the kitchen. Sharp, good balance with a good handle. I followed by buying a sharpening stone and rod. I use the rod daily and the sharpening stone once every few months. These quality knives need looking after for best results. Don't let them blunt away and don't wash them in the dish washer!

Here is a good reason not to put your knives in the dishwasher... The blade is good, but the tang rusted in the handle about 1/2 inch. Although it has been in the dishwasher, which is not recommended. Mine came apart after I had owned it for three years. Will PAUDIN offer me a new knife... I'll wait and see. I own 3 of the PAUDIN knives, and they are very good, but again, if you put them in the dishwasher, they won't last!
