Review: Great Start . . . Looking Forward To More - I'm an avid "griller" but a novice "smoker." After quite a bit of research and reading reviews, I decided that this should be the smoker that takes me past rubbing some liquid smoke on ribs and putting them in the oven for three hours. The smoker did arrive with just a couple small, cosmetic dents . . . Nothing that compromises the integrity of the unit. It did assemble fairly easily, but I am used to buying something and having to put it together. The drawers that hold the wood chip and water pans are slightly un-level (out of square) when closed, but that does not seem to be a problem. I've used the smoker twice now. So far, I've been very happy. I still need practice myself with respect to smoking meat but keeping a constant temp and generating good smoke is easy. I smoked pork ribs and chicken thighs the first time. They turned out well but the ribs were a little too tender. Yesterday I smoked a small lean brisket and a salmon fillet. No complaints and again the smoker was easy to use. I'm still trying to figure out the temperature. I think the thermometer which comes with the smoker shows about 20 degrees too high. I have a high temp oven thermometer hanging inside and a wireless digital thermometer. Both of these show around 20 degrees less than what comes with the smoker. I am still learning but I think I may start assuming that the door gauge shows a bit too high. Overall, I'm very happy so far and looking forward to next weekend. So far, I would recommend this smoker.

**Q: How long does a propane tank last?**
A: I have 2 propane tanks always start with full tank on smoker, switching used tank to grill when done smoking uses half tank per smoking session As to not worry about propane running out, I always start with full tank You can place tank on scale to determine volume remaining

**Q: could you smoke like four 15 pound hams in this?**
A: Yes. I have smoked two full sized briskets, six racks of baby back ribs and four sausages at the same time. It has five cooking racks that can be adjusted for height or removed altogether, which gives a lot of latitude on smoking height. Btw, our house has natural gas, so I modified the smoker to run off natural gas rather than propane and never have to worry about running out of gas in the middle of smoking. Hope this helps.

**Q: Can this be built into a bbq island under a drop in bbq**
A: What do you mean by under a drop in? No if you're trying to place something over the top of it.

**Q: how can you get the temp below 200**
A: You will need to install a needle valve in series with your gas line.  This will allow you to have the tank valve fully open (really hard to vary it anyway), as well as leave your dial on the smoker in a set place as well (also, hard to adjust, since a small adjustment can still lead to a large change in temp).  Having this in place, you can then fine tune the amount of gas going to the burner.  You will also need to play around with the top and bottom vents to see how they effect the temp.  I would suggest testing out a few different setting without any meat present.  You essesntially have three variables to play with (assuming you leave the valve on the tank and dial on the smoker alone), the needle valve, the bottom vent(s), and the top vent.  Keeping two of the three constant, change one of them slightly and note the result.  Probable best to keep a log so that you don't have to rely on memory when it comes time to smoke.  Also keep in mind that the temperature (and/or lack or present of wind) outside will also effect the temp inside.

### ⭐⭐⭐⭐ Pretty darn happy with it - couple issues

I've had this smoker for about 3 months and have used it 4 times so far. Pros: - Generally well built. - Fits a full-size brisket really nicely. I cooked four full brisket flats and two chickens at once with no problem. - Sturdy - The fire box and the pan are nice and solid. - Heavy. You don't have to worry about it tipping over in the wind. - Came VERY well packaged. Was kind of amazed at all the special parts to keep it safe during shipping - The water pan is nice and ample - I've gotten some great results. Cons: - Others have commented about the magnetic closures. They are really weak. The first time I fired it up, the door kept opening up. A piece of lathe under one leg helped a little bit to square it, but it still opened. I solved the problem with using a very small bunge cord to keep the door tight. Very easy solution. - The temperature control is VERY sensitive. Just a 1/8" turn on the nob can move the temperature a good 20 degrees. Somewhat hard to dial in correctly. Just takes some practice and some attention. Overall, pretty pleased. I would recommend to others.
