Oil pressure for sure. Temp i s depends on the sender that is installed in the block. I would say yes, as the inboard engines are usually Ford and GM blocks and share a lot with cars

Since it doesn't come with the appropriates sensor, how does one know what sensor to buy?

The sensor is specific to your engine. It screws into the block and the wires run back to the dash. Check your manual or search based on your engine specs.
