Can it come with different color? Like the 501stlegion color or do you have to buy that?

What you see on the box is what's inside. Never thought about it but different colors would be nice.

Does the bottom half of the craft detach like the original model did?

No. That would be the lego star wars dropship and at-ot. The bottom of the gunship is fully attached and can not be removed. The only thing that can move like that is the speeder storage in the back.
