Dear Gayatri, a very good observation indeed. Saffron is quite bitter in taste. This is due to the presence of an organic compound known as "Picrocrocin". Morever, there are laboratory tests which can measure the level of "Picrocrocin" and as a result determine how bitter that batch of Saffron is going to be. For Saffron to receive a "Grade-A" certification, "Picrocrocin" levels have to be above 70 (Bitterness expressed as absorbance of Picrocrocin at about 257 nm (on dry basis). Our batches have exceeded these levels time and again!
