Q: Would this we good for polymer clay baking? As a beginner

Its a very basic oven, made for light use, so I do not think it would be suitable for any other use !!

Q: Could i use this with a 1ooo watt inverter

This oven is "plated" (= official rating) for a 650W loading. It is fitted with thermostat and automatic controls, so a supply of 1000W should be more than adequate. The "Inverter" reference only refers to the source power conversion and says that the AC supply was converted from a DC supply. However, I'm not an Electrical Engineer, nor willing to accept any responsibility if you blow it / yourself up. Take care, and get a proper electrician to confirm. Hope this helps. I think it's OK but prefer you got a second opinion.

Q: Is there room to put soup in a dish to warm?

It's not suitable for soup. A dish wouldn't fit. It also doesn't heat things quickly like a microwave. It's an oven that's more of a grill imo.
