What is a good spanset length for a tall studio building to hang a hoop?

Our spanset are a complete circle, the length stated is the maximum usable length and not the circumference, eg. 0.5m EWL has a circumference of 1.0m. As a guide if you choke the spanset around the hoop you will lose approx 15cm off the working length of the strop.For your reference

For an Ariel hoop with two hooks do you need two of these or do you just use one with three hiking clips?

To look clean and nice, three (3) is actually recommended. You will need 3 spanset, triangle rigging plate (you can buy in Amazon or Aerial Animals), and about 7 carabiners. You will need to connect the two spansets to the lyra with two carabiner. Then connect all three spanset with the triangle rigging plate (this step will need 3 carabiners). Then the top spanset you can either already to hook to a tree, but it won't spin. If you want to spin, then you will need to add a swivel to it. I hope this helps!
