Once opened I keep in the refrigerator and I have not had a problem with them going bad. I have had some in the refrigerator for months, because a second bottle was opened by one of my children by accident. I have not had any problems with Chinatown Soy Sauce and really like it. It is the lowest sodium soy sauce I have found on the market.
