I used pork instead of mutton, and it turned out very well. I like that the spices were packaged separately so you use more or less, depending on what you like. ### ⭐⭐⭐⭐⭐ A perfect blend *by M***I on Reviewed in the United States on April 16, 2013* This spice mix is the most authentic commercial blend that I have found. It has all of the basic ingredients, including lavender and rosemary, which many companies leave out.I use this mixture on omelets (added after it's cooked, not when making the omelet because I have found that the delicate fragrance and flavor of the lavender gets destroyed during cooking).It goes beautifully on lamb. Although I am a vegetarian 364 days of the year, I do eat lamb each Easter because it is an Italian tradition. I have found that by rubbing the lamb with rosemary and olive oil before cooking, then using this herb mixture just before serving, it greatly enhances the flavor.Also, I especially love this on white fish, such as haddock, halibut, etc. The flavor it imparts goes perfectly with those. I almost always prepare my fish "en papillote" and find that I can season the fish with this mix prior to cooking without any adverse effects on the aroma or flavor, especially the delicate lavender.Not only is this a cut above every other commercial blend I have tried with respect to the herbs used and the proportions, but it's also fresh. Each herb is aromatic and bursting with flavor.
